Avocado is so versatile - you can serve it on toast with eggs, as a dip, or you can put it in pasta! On Slimming World, avocado is 'synned', however, some people choose not to syn avocado due to it being full of health benefits. I have chosen not to syn it, but if I find that it affects my weight loss then I will start synning it. I have included the syn value for this portion if you would like to syn it!

Ingredients

  • Pasta
  • 2 bacon rashers (with fat removed)
  • 1 small onion, chopped
  • 1 tbsp Aldi Pesto Genovese (3.5 syns per tbsp) 
  • 41g avocado (some decide not to syn avocado but if you do, 41g is 3.5 syns)
  • 25g Philadelphia Light (2 syns)
  • 1 vegetable stock cube
  • 1 tsp salt
  • 1 tsp oregano
  • 1 tsp garlic

Method

1. Cook the pasta in a frying pan along with a sprinkle of salt. Once cooked, drain some of the water whilst leaving a little in the pan.

2. Add the vegetable stock cube, chopped onion and bacon and stir. Whilst the onion and bacon is cooking, mix pesto, avocado and Philadelphia in a bowl.

3. Once the onion is translucent and the bacon is cooked, add the avocado, pesto and Philadelphia along with the salt, oregano and garlic.

4. Stir well and cook on a high heat, stirring occasionally. Once the sauce begins to thicken, turn down to a medium heat and continue stirring occasionally.

5. Once the sauce is thick and soaked into the pasta, serve with a side of salad.
