This recipe is so simple yet full of flavour and super quick to make! And it would taste just as divine served with pasta instead of rice! This dish is definitely going to be a favourite of mine! Don't forget to tag me on Instagram (@sophieml_sw if you make it!


serves 1
  • 1 cup of white rice 
  • 1 rasher of bacon cut into cubes (with fat removed)
  • 1/2 a small onion, chopped finely
  • 2 chestnut mushrooms
  • Frylight
  • 75g Philadelphia Light (counts as your Healthy Extra A or 6 syns)
  • 100ml water
  • 1 vegetable stock cube
  • A sprinkle of salt & pepper
  • A sprinkle of mustard powder
  • 1 tsp oregano
  • 1 tsp garlic


1. Cook the rice according to the instructions on the pack. I like to cook mine in the rice cooker as I am awful at cooking rice on the hob!

2. Whilst the rice is cooking, spray a pan with Frylight and leave a medium heat. Once the Frylight begins to melt, add the chopped bacon and leave to cook.

3. Once the bacon is cooked, add the chopped mushrooms and onions and leave to cook until the onion is translucent.

4. Add the Philadelphia, water, vegetable stock cube, garlic, oregano, mustard powder, salt and pepper and stir well and leave the sauce to thicken for 8-10 minutes.

5. Once the sauce has thickened, serve on top of rice and top with parsley (optional)
